Culinary Arts The participant will be introduced to management and team members to become acquainted with the property, company policies, procedures, customer service and safety standards. The participant will have the opportunity to train in Garde Manger or the Cold Kitchen. Knowledge of this kitchen is essential for a culinary career as it promotes direct relationships with key staff in the kitchen, stewarding, purchasing and storeroom areas. The participant will get more exposure to restaurant operations while working in this phase. They will learn the basics of food timing, to ensure all food items are delivered accurately and within the standard wait times. The participant to the different hot line positions in the kitchen. The participant will improve fundamental skills in the production prioritization of protein storage, butchering salmon, protein cooking for main entrees in the restaurant. * PHASE 1 * Gain a clear overview of the organizations operations, clientele and niche in the marketplace. The participant will attend a one-day orientation and learn the scope of the organizations activities, the history, organizational mission and objectives as well as the significance of the division and department’s responsibilities in the success of the organization. ** PHASE 2 ** This phase will help to develop the participant's organizational and planning skills needed for a high volume hotel business. The participant will also improve production, timing and plating skills that can only be experienced in a busy restaurant business. The following provides a list of skills/tasks the participant will be taught: Monitor the quality of specified products received from suppliers and ensure compliance with department standards Start prep tasks and production of items needed for the day. Select, clean and prepare fruits and vegetables. Produce salads, fruit, vegetable, cheese, meat mirrors, trays and centerpieces Maintain proper storage procedures as specified by Health department and hotel requirements Prepare and produce cold menu items for designated F&B outlets Assist Kitchen staff wherever required to ensure optimum service to guests *** PHASE 3 *** Preparation of sauces, soups, and hot appetizers. Participant will also learn how to size out portions and the importance of portion control for cost and consistency. Participant will gain experience plating designs and learn to use utensils and tools of the culinary profession needed to be a productive member of the team. **** PHASE 4 **** The participant will learn how to: Master meat and seafood preparations Increase skills in a la carte production of food items Understand how to establish quality standards, including portion sizes while controlling kitchen waste and maintain budgeted food costs Learn how to control financial results of the kitchen operation, including labor costs and controllable costs Employ safe and clean practices with all aspects of food preparation ****PHASE 5 *** This phase will teach the participant to learn the skills needed to supervise a shift in the kitchen. The participant will utilize knowledge of techniques, organizational culture, procedures and practices learned in prior rotations. The objective is to implement these skills in a supervisory level and successfully demonstrate their ability to meet all of the hotel’s standards of a leader.
