Dinner encompassing the following stations: garde manger, grill, entremetier Breakfast consisting of two stations: egg and plancha Both breakfast and dinner are responsible for the knifework and other less time-intensive preparation required to create the dishes sold on the menu, as well as preparing any cold dishes from the menu that are also sold in the market. Time-intensive preparation required, responsible for market-specific items that are sold in the cold case, as well as receiving deliveries and stocking them properly in the walk-in fridge and freezer.
