Culinary Kitchen rotation: Phase 1: Orientation (14 Days) Learn food safety, sanitation standards (HACCP), and kitchen policies Practice knife skills, weights/measures, and basic prep techniques Understand workplace expectations (punctuality, communication) Taught through: hands-on food prep, demonstrations, guided instruction, and daily feedback Phase 2: Cold Food Preparation (120 Days) Prepare salads, dressings, cold garnishes, and desserts Execute station setup and plated/banquet presentations Build consistency by following recipes and standards Taught through: shadowing team members, supervised station work, pre-shift meetings, and coaching Phase 3: Hot Food Preparation (120 Days) Learn cooking methods (grilling, sautéing, roasting, braising, steaming, poaching) Work on hot line execution and daily production planning Develop basic butchering and equipment handling skills Taught through: hands-on line work, task-based training, and real-time supervision Phase 4: Saucier & Supervisory Skills (111 Days) Prepare stocks, soups, sauces, and banquet hot foods Break down poultry and seafood Build leadership, time management, and team coordination skills Taught through: advanced kitchen responsibilities, mentoring, and guided leadership practice Training Approach Across All Phases Highly hands-on, real kitchen experience Daily supervision and continuous feedback Progressive skill-building with increasing responsibility
